PROTEIN+BURRITO BOWL

INGREDIENTS
1 teaspoon avocado oil
¾ pound ground beef
2 tablespoons taco seasoning
½ cup water
RICE
Protein+ Brown Jasmine Rice
TO SERVE
1 cup shredded iceberg lettuce
½ cup grape tomatoes, quartered
½ avocado, diced
1 small jalapeño, thinly sliced
2 tablespoons sour cream
Chili flakes
½ lime, cut into wedges
1 - MEAT
Put the oil in a skillet and place over medium heat. Once the oil is hot and shimmers across the pan, add the meat and break up with a wooden spoon. Once the meat is browned and cooked through, add the taco seasoning. Stir well to coat the meat. Add the water and simmer for about 5 minutes.
2 - RICE
Heat rice according to package instructions. Divide the rice evenly between two serving bowls if using a 8.8oz pouch or 1 x 4.4oz cup per bowl.
3 - SERVE
Add the beef evenly to each bowl and then add the lettuce, tomatoes, avocado, and jalapeño to each bowl. Top each with sour cream, sprinkled with chili flakes and serve with lime wedges on the side.
4 - TIP
Batch cook taco meat and freeze in individual or multi-serving packets. Makes for an easy meal in minutes.
